SHEREHE! an apple-pear-honey sparkling wine infused with fresh pink jasmine flowers.
With the harvest of organic Asian pears and apples from the ancestral lands of the Coast Miwok and Afro-Indigenous farm in Sonoma County called EARTHSeed, SHEREHE! was born.
SHEREHE! Pays homage to the Black hidden figures in American cider culture such as Jupiter Evans and Afro-Indigenous culture connected deeply with nature’s gifts: honey and botanicals.
Honey is one of the oldest superfoods and one of the most culturally influential forms of nature on Earth. Inspired by Marreya’s East African roots, ancient Ethiopian honey wine called Tej, and honey’s magical beauty, Marreya, Scott and Ellen of Tilted Shed, and Candice of Sonoma County Bee Company decided to collaboratively produce a modern spin on it with another force of nature: jasmine.
Production Notes:
In September 2021, Mad Marvlus and Tilted Shed decided to collaborate on the creation of cider with some very special fruit: 1 ton of Asian pears and apples organically-farmed on the ancestral lands of Coast Miwok and Southern Pomo People in Sonoma County, California at an Afro-indigenous farm called EARTHSeed.
Initially, we fermented the apples and Asian pear blend separately in neutral French oak barrels then combined them as they were finishing fermentation dry as possible. Next, we added a small amount of raw wildflower honey from Sonoma County Bee Company to help add flavor, body, and kickstart fermentation to create its effervescence. We slowly infused the cider with fresh pink jasmine we foraged for throughout Sonoma County. We bottled it in February 2022. Unfined. Unfiltered. 20ppm SO2 added.
